Chick Pea Soup

This is one of those dishes that prove the adage that less is often more!

Revithosoupa (chick pea soup) is a Greek staple, and although it is very simple, what this soup lacks in appearance it makes up for in taste. As with most Greek soups, make sure to add a good spoonful of extra-virgin olive oil to each bowl just before serving.

This is a great choice for vegetarians and vegans alike when you use vegetable stock instead of the chicken stock. This soup is most often served with a nice slab of Feta cheese and bread from a wood-fired oven – yum!

Simple Chickpea Soup (Greek Revithosoupa)

Ingredients

  • 4 tablespoons extra-virgin olive oil divided
  • 2 cloves garlic chopped
  • 1 teaspoon dried oregano leaves
  • 3 cups chicken or vegetable stock or canned broth
  • 2 cups cooked chickpeas or 1 can (28 ounces) chickpeas, rinsed and drained well
  • Grated zest and juice from 1 large fresh lemon
  • 1 bay leaf
  • 1 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper

Instructions

  • Pour 2 tablespoons of the olive oil into a 3-quart saucepan over medium heat, add the onion and cook, stirring constantly, just until the it begins to turn golden, about 2-3 minutes. 
  • Add the garlic and oregano and continue cooking until the garlic is fragrant, about 1 minute. 
  • Add the stock, chickpeas, lemon zest and bay leaf to the saucepan, increase the heat to high and bring to a boil. Immediately reduce the heat to low, cover and simmer until the chickpeas are creamy but not disintegrating, about 30 minutes. 
  • Stir the salt, pepper, lemon juice and remaining 2 tablespoons of olive oil into the soup. Taste and add more salt and pepper if desired. Serve immediately with a drizzle of olive oil on top. 

VARIATION: For a creamier soup, puree half of the soup in a blender or food processor and return to the saucepan. Reheat gently before serving.

Note: I know that canned chickpeas is an option for this soup, but really, there is nothing better than chickpeas cooked at home. So easy! If you are worried about time, use your InstaPot or slow-cooker: hands-free, and no watching required!
